Green Salad: Or How to Eat as Much as Your Husband without Gaining Weight

Some bloggers have  written about the problem of eating as much as one’s husband. I think that they are right. That is why it is funny that I ate as much as my husband for lunch today.

I did not consume nearly the same amount of calories not that I was counting ;-) but I ate the same volume of food.We each had a large green salad. Mine (pictured above) had a few croutons and just a taste of the dressing. His (pictured below) had lots of dressing, croutons, and two hard-boiled eggs.

My weight gain came mostly from not exercising at all due to pain, but less-than-healthy food played along. Adjusting to my husband meant adjusting to his food. While I did not start eating meat, I did add a lot more dairy and refined foods to my diet. I had never had ramen prior to eating with my husband. He had never had lentils prior to eating with me.

Thankfully, I have finally realized that I need to eat a lot, and I need to eat a lot of the foods that I ate while living alone.

Green salad
Two Servings

  • 2 small heads of romaine lettuce
  • 1 large cucumber
  • 1 small head of broccoli
  • 2 small green bell peppers

Fresh green dressing
6 servings

  • 1 egg
  • 1/4 cup canola oil
  • 1/4 cup apple cider vinegar
  • 1 bunch green onions
  • 1 cup flat parsley leaves (not packed)
  • salt and pepper to taste

Salad

The croutons are just chunks of bread drizzled with olive oil, sea salt, and dried herbs. Toasted in the oven.

    I love this post – I also signed up for the salad challenge, so I need to get on that.

    Isn’t funny how your diet changes when you live with someone? My guy and I have a joke that he doesn’t consider something a “meal” unless it includes meat or cheese. For me? I could eat pasta for weeks.

    Paula, I’m with you! I’d much rather eat pasta than meat.

    TUW, I don’t share your love for dressing, but since my husband does I try to find ways to make it healthier. It is amazing how much vinegar helps for getting things wet without adding fat!
