Spinach tomato bean yum

This is a picture of a caserole that I made with black-eyed peas, spinach, tomatoes, onions and bread crumbs. The onions and spinach were sautéd in butter with salt, garlic, and fennel. After adding in the chopped tomato and cooked beans I covered the mixture with homemade italian breadcrumbs and freshly grated parmesan cheese. It is also great with just a little cooked rice mixed in.

My husband thought it was delicious but wondered who on earth would ever think of such a combination. I got inspiration for combinatin from all recipes (anyone else an allrecipes.com fan?) but have little ability to stick to a recipe. In this case I suspect that my version was better anyway.

Be honest. Do you follow recipes faithfully or end up using them for inspiration as you dump ingrediens with glee?

Any ideas for surprisingly good food?

    I LOVE allrecipes.com. Oh, my, I credit them for helping me be a good cook and also I find the best recipes for what I already have in the cubbard.

      I just cut up old bread and drizzle it with melted butter and sprinkle it with typical Italian spices (basil, oregano, garlic, whatever I have etc) and a little salt. After broiling it until browned I break them up into crumbs. Yum!

    I too am totally unable to stick to a recipe. I always alter it somehow, but I generally like my creations. : )

    Ohh Texas. They really are insistent that they have the right to secede, though I think only a few are serious about ever really doing it. I don’t know enough about local politics to really know… but the whole thing really makes me laugh.

    I almost never follow the recipe, even if it’s adding in extra spices or vegetables or sauce that I think will work. It always causes my husband to beg “Will you please write the recipe down this time!”
